State Recipes from the Living Well Book
Rhode IslandRhode Island StuffiesRhode Island's state shellfish is the quahog, more commonly known as the hard clam. Quahogs, whose shells can be 4 inches or larger, may be found on the menu in almost every Rhode Island restaurant, whether it be in the form of clam chowder or clam cakes. A stuffie, in particular, is Rhode Island's staple way to prepare quahogs. Since Rhode Island also provides 25% of the country's commercial quahog catch, it's no wonder that Rhode Island is known as Quahog Country. |
