Buffalo Tips A La Bourgogne

The majestic buffalo is the central focus of our Wyoming flag and is also our state mammal. This recipe was served when Lady Bird Johnson, wife of President Lyndon Johnson, visited Green River, Wyoming in connection with the dedication of the Flaming Gorge Recreation Area on August 17, 1964. This recipe appeared in the Cooking in Wyoming Woman's Suffrage Centennial Edition Cookbook and was submitted by Mrs. Gale McGee, wife of Wyoming's United State Senator.
