State Recipes from the Living Well Book
North CarolinaMama's Sweet Potato CasseroleNorth Carolina ranks first in the production of the nutritious sweet potato. Approximately 36,000 acres are grown in North Carolina — nearly 40 percent of the total U. S. production. Many sweet potatoes are marketed as yams, but are actually sweet potatoes with a vivid orange color, a soft moist consistency when cooked, and a uniquely sweet flavor. The term yam has been used every since slaves from West Africa mistook the sweet potato for their native nyami. |
