State Recipes from the Living Well Book
FloridaKey Lime PieFlorida Key limes are also called West Indian or Mexican limes. They are small, thin-skinned and yellow-green in color. Famous as an ingredient in Key lime pie, the official Florida dessert, they can also be used the same as limes or lemons. Select limes that are fresh, not leathery or shriveled at the stem end. A brownish circle at the pointed end can indicate rot or dryness. Bottled Key lime juice is available commercially. |
